It’s loaded with grated parmesan and zesty shallots, then tossed in a tangy lemon vinaigrette. The flavor can’t be beat!
This salad is easily prepped ahead of time by making up the dressing, chopping the shallot and lettuce, and zesting the lemon. I would wait until right before serving to add the parmesan and dressing to maintain a nice crunch. No one wants a soggy salad!

Parmesan Chopped Salad

Ingredients
- 2 hearts romaine lettuce, washed and dried
- 1 shallot, sliced thinly
- 1 lemon, zested and juiced
- 1/3 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 1/3 cup parmesan cheese, grated
- 1/2 teaspoon red pepper flakes
Preparation
- Slice the lettuce into bite-sized strips and place in a large salad bowl.
- Add shallots and lemon zest to salad bowl.
- In a small bowl or jar, whisk together lemon juice, olive oil, salt, pepper, garlic powder. Drizzle over salad and toss to combine.
- Top with parmesan cheese and red pepper flakes. Toss again until evenly combined.
