What is more refreshing than a cool and minty mojito? Maybe mojito flavor in fruit salad form! See, this Mojito Melon Salad isn’t just any basic fruit salad – it pairs three kinds of juicy sweet melon (and some tart pineapple too) with a sweet and tangy mint dressing that plays up the fruits’ best qualities (and keeps you cool and quenched too).

You know when you bring a dish to a party and nearly everyone asks you, “What is in this?!” This is that kind of dish, and it’s because the flavor is a notch above the flavor of any fruit salad they’ve had before. It looks like basic ol’ fruit salad, but one bite shows you that it’s certainly not basic.

We’ve got watermelon, honeydew, and cantaloupe – and I strongly feel that this is an occasion to get out your melon baller, it’s just so much prettier – but there’s pineapple in the mix too, which adds a tart zing to the sweeter melon. It’s a good mix, an easy mix, but the dressing is really what brings it all home…

… And great news, that’s just a simple mixture of honey, lime juice, and mint. There’s nothing fancy at all going on here, it’s just a few simple ingredients that work together incredibly well. It works for the same reason a mojito works – it’s that ideal refreshing balance of mint and lime backed up by some sweetness, and it’s deeeelicious.

Ingredients
  • 1 mini seedless watermelon
  • 1 cantaloupe
  • 1 honeydew
  • 1 pineapple, cubed into bite-sized pieces
  • 1/4 cup honey
  • Juice of 2 limes
  • 1/4 cup fresh mint, chopped
Preparation
  1. Using a melon scooper, scoop out rounds of all melons and place in a large bowl along with cubed pineapple.
  2. In a jar or small bowl, whisk together honey, lime juice, and mint. Pour over melon and toss evenly to coat.
  3. Serve and enjoy!
