When a chocolate dessert is needed, waiting is virtually impossible. Since living rurally makes going to the store or a bakery not very convenient for a quick dessert, I have to be resourceful. With the Spartan limitations of my pantry to satisfy any dessert desires I scoured the internet for answers. Luckily I’m not the only one who thinks about a speedy dessert recipe because there’s an Oreo-topped brownie that bakes up in the microwave and is calling my name.

This video shows that you don’t need a baker’s worth of pantry ingredients to make a from-scratch desert. The recipe is super forgiving, meaning you can modify the brownie to be cakey vs fudgy.

Simple bars of chocolate are melted with butter, and that melting process creates the best brownie texture. Melting butter, rather than creaming butter, creates a denser and richer chewiness in baked goods. Next, sugar is mixed to add sweetness. In the video, there’s only a small amount of sugar, but you can certainly add more sugar. Additional sugar creates a moister, less crumbly brownie. Just be aware that added sugar will affect the baking time.

Whisking the sugar into the warm chocolate-butter mixture cools the batter just enough to prevent the eggs from scrambling. Again, if you feel like a fudgy brownie, add an extra egg yolk.

Now gradually add in flour in small increments. If you add it all at once, you’ll get a lumpy batter that’s full of air pockets.

Use a small casserole dish and line it with a bit of parchment paper, this will make it easier to remove the brownies. Pieces of Oreos are broken and crumbled onto the top of the batter. Again if you’re a big fan of Oreos, you can modify the recipe by adding the crumbled cookies to the batter.

The cook time varies, but since the brownie portion is smaller than usual, the batter will bake within a range of two to six minutes. Worrying about cooking it just right? Microwave the batter in increments. When in doubt start with the shortest cook time and add extra minutes. Brownies are supposed to be a little underbaked, and you can’t reverse the mistakes of overbaking.

Be careful removing the pan from the microwave, because it will be hot. If you want even squares, you can wait to let the brownie cool — but let’s be real — no one’s gonna wait that long and eat it when it’s still warm!
