
We love a good layered salad here at 12 Tomatoes and once you taste the recipe we have for you today, you’re bound to be a fan as well. This Layered Dublin Salad is a play off our favorite pea salad, but with a stunning presentation that is sure to be the star of any potluck. Whether you’re hosting a spring lunch, bringing a dish to share, or just looking to jazz up your weekly dinner rotation, this one’s a guaranteed showstopper.



We’re packing in the color and the flavor here. Start things out with a base of chopped iceberg lettuce for the perfect crunch, then follow it up with red onion for a little zip. Next up comes a layer of hard boiled egg, chopped sweet peppers, and the all importantly peas. We use frozen peas and just set them out to thaw ahead of time. Load the top up with some aged Irish cheddar for that signature nutty taste.



No layered salad is complete without a creamy dressing to seal the deal, and this one delivers. A tangy mix of mayo, sweet relish, spicy mustard, and dried thyme, this dressing brings a balance of savory and sweet that complements each layer without overpowering. Leave the salad in those gorgeous layers until you’re ready to serve it up. Give it a good toss at that point to distribute that tasty dressing throughout, then it’s time to dig in!


Layered Dublin Salad

Ingredients
- 1 head iceberg lettuce, chopped
- 1/2 red onion, finely chopped
- 4-5 hard boiled eggs, chopped
- 5 sweet peppers, diced
- 2 (12 oz) bags frozen peas, thawed
- 1 ½ cups aged Irish cheese, shredded or diced
Dressing
- 3/4 cup mayo
- 1/2 cup sweet relish
- 1 tablespoon spicy mustard
- 1 teaspoon dried thyme
- 2 teaspoons salt
Preparation
- In a small bowl, combine all dressing ingredients and mix until smooth.
- In a large glass bowl or trifle dish, layer ingredients in the following order: lettuce, red onion, hardboiled eggs, peppers, peas, and cheese.
- Pour dressing over the salad and spread across the top.
- Wait to toss salad until ready to serve (to show off those layers!).
