The funny thing about Impossible Apple Pie is that it’s not impossible at all (and neither is Impossible Ham and Swiss Pie or Impossible Lasagna Pie or Impossible Coconut Rum Pie, for that matter). It just seems impossible that you can pour a single batter into a baking dish and end up with a slice-able, ever-so-serveable fruit pie that’s this delicious. You might even say it’s as easy as apple pie!

I will admit that this Impossible Apple Pie is a little cake-like, but the bottom does have a crust-like quality. And besides, it’s good enough that you’re not going to care which dessert category it fits into.

You’ll want to slice your apples thinly (you can leave the peels on) and stack them up in a baking dish in neat little rows. You can turn your baking dish on its side so you’re stacking your apples vertically – it’s a little easier to get them to stay in lines that way.

Then you’ll mix up a quick batter. It’s just a one-bowl situation featuring sugar, eggs, melted butter, milk, flour, vanilla, baking powder, and cinnamon. It’s lightly spiced and lightly sweet and very easy to throw together.

Then you pour that batter allllll over the sliced apples.

It’ll seep down into the nooks and crannies and hold everything together once it bakes. The bottom is a bit crispy, the center is moist and sweet, and there’s plenty of fresh apple in every bite.

Are you going to fool anyone that this is a traditional apple pie? Not a chance. But that’s not really the goal here. It’s just a way to get that apple pie flavor you know and love in a very simple manner. Happy baking!
