I typically find myself scavenging through my pantry trying to figure out what I can make with the ingredients on hand. And peanut butter cookies are very often the answer. This recipe makes the baking process even easier with a mix that can be made up ahead of time! Just add the wet ingredients and your cookies are ready for the oven.

As the name suggested, these cookies are made with powdered peanut butter. There are several different brands of the powdered version available and they should be found in the grocery aisle with the rest of the peanut butters. The powdered stuff still has plenty of protein, but less fat. And, of course, that delicious peanut butter flavor we all know and love! It’s perfect for baking and we can’t wait to find other ways to use it in our baking endeavors.

Mix:
  • 2/3 cup flour
  • 1/2 cup sugar
  • 1/2 cup powdered peanut butter
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
To Prepare Cookies:
  • 1/3 cup butter, room temperature
  • 1 egg
Preparation
  1. To make mix: sift together all dry ingredients in a medium bowl then pour mix into an airtight container (like a canning jar).
  2. When ready to bake: Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  3. Add mix to a large bowl and stir in butter and egg. Keep stirring until mix comes together as a dough.
  4. Scoop 2 tablespoons of dough at a time and roll into a ball. Evenly place on the prepared baking sheet and press down with a fork.
  5. Bake cookies for 7-9 minutes.
