This Fluffy and Cheesy Street Food Pizza Got 26 Million Views
Ever wonder about grab-and-go food in other countries? Prepared to be jealous, because we’re certainly missing out on some amazing pizza. And I’m not talking about some run-of-the-mill pizza, I’m talking about this double cheese pizza that’s made in a country you wouldn’t have guessed.

We know the internet is full of food videos, but this one in Korea specifically caught my attention. Despite being halfway across the world, this Milan-based pizza chain didn’t adapt to local preferences and kept it hundred percent Italian.
This fifteen-minute long video goes over the start to finish process of making a delicious Milan-style pizza and most of the ingredients are imported straight from Italy. You would wonder if it would be popular in a country like Korea but it doesn’t seem to be struggling, as the pizza itself seems to mirror Korean food trends.

Korean food trends, like what? As we’ve seen with other food trends to come out of Korea, the core of trendy food over there is to take one element and change that single part with a completely different texture, so a fluffy crusted pizza is right on point.

Here the trendy Milan pizza has a delicious crust that’s oven-fried with a round of oil baking. In America, we’re all familiar with deep-dish or thick crust pizza, but we’re also familiar with the reality of these types of pizza, these versions always have a dense and heavy texture. I can never eat more than one slice or I’ll be on the floor hibernating. The pizza in this video is not heavy at all, in fact, this crust is soft and airy. How is this delicate pillowy texture achieved? Halfway through the baking process, they pour oil around the edges and under the crust, this step does two things: it gives the crust an amazing crispy bite, and it also puffs up the dough.

You may think adding oil would weigh the dough down, but since the pizza is baked at such a high temperature, the oil in the pan acts as a deep fryer, expanding the water and air bubbles in the pizza dough. Now many pizza snobs will turn their noses up at a bready pizza, but they need to know that not all pizzas are thin. Neapolitan style isn’t the end-all-be-all of “real” pizza, in fact, it is just one of many versions of pizza because as you go more north in Italy, the crust gets thicker.
