Easy Slow Cooker Salsa Chicken

This has quickly become one of my favorite ways to prepare chicken. It’s so ridiculously easy, and the end result is so delicious! It’s almost infuriating how good this chicken is with little to no effort. I’m not complaining, though. With just five ingredients, you’d think this chicken would be plain, but it’s bursting with flavor! See how it comes together in the video below.

With just chicken, salsa, taco seasoning, garlic powder, and cheese, this chicken dish has no right to be this delicious. One taste, however, and you’ll be a believer too! While I love serving this chicken breast as-is, I’ve also tried leaving it in the slow cooker for a few more hours and then shredding it. This is perfect for shredded chicken tacos, taco bowls, or quesadillas.

Start by placing the chicken breasts in the slow cooker. Mix salsa, taco seasoning, and garlic powder in a small bowl and spread over the chicken. Cook for 2 hours on high or 4 hours on low.

Before serving, preheat your oven to 425 F degrees and transfer the chicken to a 9×13 baking dish. Spoon leftover salsa mixture from the slow cooker on top of the chicken. Sprinkle each breast with cheese (about 1/4 cup of cheese for each breast). Bake for 15 minutes or until the cheese is golden brown and is bubbling.

  • 2 lbs chicken breasts boneless, skinless
  • 2 cups salsa
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 cup Mexican Blend cheese, shredded
Preparation
