Easy Cilantro Chimichurri

When I want an everyday meal to feel a little extra special, chimichurri is the first thing I turn to. It takes mere minutes to throw together and it adds so much vibrancy and flavor to a meal and there’s so much you can do with it! Spoon it over chicken or steak, top a baked potato, dress up some roasted veggies… there are endless possibilities. While cilantro isn’t a traditional inclusion, I love the flavor it adds, so this Easy Cilantro Chimichurri is pretty much the only way I make it. (But sometimes with an extra squeeze of lime juice for good measure.)

You can make chimichurri in a food processor, but I am generally not terribly excited about cleaning all of the parts that come with one, so I usually opt just to chop my chimichurri by hand. Plus I find chopping kind of relaxing. It takes just a few minutes and all you need to do is chop up your herbs and aromatics very finely and toss them all together in a bowl. That’s parlsey, cilantro, oregano, garlic, and shallot, in this case.

You’ll add in some red wine vinegar, red pepper flake, and salt and pepper before adding in the olive oil. All that’s left to do is stir it all together! See? Easy peasy! And so very delicious.

Ingredients
  • 1 1/2 cups flat-leaf parsley, tightly packed
  • 1/2 cup cilantro, tightly packed
  • 2 tablespoons fresh oregano
  • 1 shallot
  • 4 cloves garlic
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon red pepper flake
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup extra virgin olive oil
Preparation
  1. Remove thicker stems of cilantro and parsley and discard.
  2. Finely chop all herbs, as well as shallot and garlic.
  3. Transfer to a small bowl and mix together.
  4. Add red wine vinegar, red pepper flake, salt, pepper, and olive oil. Adjust seasoning as needed.
  5. Serve and enjoy!
  6. Notes: To prepare in food processor, combine all ingredients except olive oil in food processor and pulse until chopped. Drizzle in oil while pulsing, until mixture comes together.
