You don’t need a lot of stuff for this, just some large flour tortillas, some cream cheese, sliced ham, dill pickles, and some garlic powder and fresh dill to round things out. First up, you’ll want to make the spread, which is just a matter of stirring some garlic powder, fresh dill, and salt and pepper into the cream cheese until it’s smooth.

Spread that over a tortilla and then sprinkle it with chopped ham and chopped pickles. Don’t be shy with the pickles — they’re meant to be the star of the show here. And then you roll.

The key to a good pinwheel is to roll the tortilla up tightly so you don’t have any pockets of negative space. You then want to wrap that rolled up tortilla in some cling wrap and chill it until it’s firm. It makes for easier slicing and for pinwheels that hold together better, but it only takes about an hour of time in the fridge.
