If I’m at a party and I see a tray of pinwheels, I’m always happy about it. They’re just fun, you know? Because they’re basically a tiny little sandwich in bite-sized form… So cute, so tasty, and there are so many ways you can make them — like these Dill Pickle Pinwheels which feature plenty of pickles, but also diced ham and a dilly cream cheese spread to tie it all together. Easy, delicious, and a little unexpected too. (In other words, perfect for your next party.)

You don’t need a lot of stuff for this, just some large flour tortillas, some cream cheese, sliced ham, dill pickles, and some garlic powder and fresh dill to round things out. First up, you’ll want to make the spread, which is just a matter of stirring some garlic powder, fresh dill, and salt and pepper into the cream cheese until it’s smooth.

Spread that over a tortilla and then sprinkle it with chopped ham and chopped pickles. Don’t be shy with the pickles — they’re meant to be the star of the show here. And then you roll.

The key to a good pinwheel is to roll the tortilla up tightly so you don’t have any pockets of negative space. You then want to wrap that rolled up tortilla in some cling wrap and chill it until it’s firm. It makes for easier slicing and for pinwheels that hold together better, but it only takes about an hour of time in the fridge.

Ingredients
  • 3 large flour tortillas
  • 8 oz cream cheese, softened
  • 1 1/2 teaspoons fresh dill, chopped
  • 1/2 teaspoon garlic powder
  • 1 cup deli ham, chopped
  • 1 cup dill pickles, chopped
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. In a mixing bowl, stir together the cream cheese, fresh dill, garlic powder, and some salt and pepper until creamy and smooth.
  2. Spread cream cheese mixture over each tortilla. Top evenly with ham and pickles. (Use 1/3 per tortilla.) Roll tortillas tightly, then wrap in plastic wrap and chill to firm up cream cheese, about 1 hour.
  3. Unwrap tortillas and slice into 1 1/2-inch rounds. Serve and enjoy!
