Cucumber Salsa

Nothing says fresh to me like homemade salsa. Don’t get me wrong, I love all salsas. But, there’s something about making it yourself that just gives the freshest flavors. And, this Cucumber Salsa is the most refreshing salsa around. There are a few curveball ingredients in this recipe, but they make it wonderfully crisp and delicious.

Cucumber Salsa

It doesn’t take much to throw this salsa together. Red onion and jalapeño give it some kick, while the cucumber keeps it fresh and cool. I used a jalapeño that was on the older side and had started to turn red so mine came out a little hotter than I expected. But, you can use as much or as little jalapeño as you like for this fun salsa.

There’s also some green apple in this recipe which gives the dish the tiniest hint of sweetness, just like tomatoes lend to regular salsa.

Cucumber Salsa

We’re using an English (or European as they are also called) cucumber for this recipe as we don’t want the seeds in a regular cucumber to alter the texture of this salsa.

Lime juice and cilantro give this unusual salsa a familiar flavor filled with tartness and aromatics. But, the lime juice here also prevents the apple from turning brown so it does double duty.

For those that don’t love tomatoes this is the salsa for you! But, even if you do love them, this Cucumber Salsa is a fresh change of pace from the usual.

Ingredients
  • juice of 2 limes
  • 1/2 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1 large English cucumber, finely chopped
  • 1 small Granny Smith apple, finely diced
  • 1/4 cup chopped fresh cilantro, or to taste
  • 1 small red onion, finely diced
  • 1 jalapeño pepper, seeded and finely diced
Preparation
  1. Whisk together lime juice, brown sugar, and salt in large mixing bowl.
  2. Add remaining ingredients to bowl and stir well to combine and coat each piece.
  3. Serve with tortilla chips or on tacos or with beans and rice.
