Creamy Balsamic Bread Dip
Think classic oil and vinegar… but so much creamier!
When you dip some bread into a little dish full of olive oil and balsamic vinegar, you might think to yourself Why would I ever need anything other than this? And maybe you don’t. Good bread dipped in good balsamic and olive oil is an incredible thing… but sometimes the craving strikes for something a little creamier and that’s where this Creamy Balsamic Bread Dip saves the day. It’s a 5-minute endeavor that only takes combining a few ingredients together in the blender and gives you a dip that has that sweet tang of balsamic and a kick of garlic but nestled into a nice comforting, creamy base.
Here’s all you do:
Take some mayo, some sour cream, a couple of cloves of garlic, a couple tablespoons of balsamic, a tablespoon of olive oil, and some fresh rosemary and put it in a blender. (Oh, salt and pepper too.)
And then blend. It’s that simple. You did it!
But let’s talk about a few of those ingredients:
When I first tested this, I tried it out with four cloves of garlic and it was STRONG and that’s coming from someone who loves garlic. Two feels right — it’s enough to give it a strong garlic presence but it doesn’t taste sharp. That being said, you could try out three if you’re brave enough. And, pro tip, letting this hang out in the fridge will mellow that garlic flavor.
I know dried herbs make life easy (I use them ALL the time!) but this is a place for fresh rosemary. Fresh rosemary tastes brighter, greener, maybe even pine-ier, and, besides, the dried stuff won’t really blend up that well. Use fresh if you can this time.
See? It’s almost as easy as bread and butter, but feels a little more special. So, get to dipping!

Ingredients
- 2 cloves garlic
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons balsamic vinegar
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon olive oil
- Kosher salt and freshly ground black pepper, to taste
Preparation
- Add all ingredients to a food processor and blend until smooth.
- Serve with some crusty bread, and enjoy!
