Cream Cheese Bacon Crackers

When you’re looking for an appetizer, you might think a cracker is just a cracker… something you set out with a cheese board or a dip. But crackers can be SO much more! When you bake a cracker, you can turn it into something that stands totally on its own as a snackable starter. It’s like magic. And add some bacon and cream cheese? Well, now you’ve entered show stopper territory. These Cream Cheese Bacon Crackers use only three ingredients and are so easy and so irresistible that it’s kind of hard to believe. But you’d better believe they’ll go quick, because they always do.

First up, you need crackers. I like a “club” style butter cracker here, because it makes for easy wrapping and because they get crisp and even more buttery in the oven. Win, win.

Second, you will need cream cheese. Many types work, you just want it to be spreadable if you’re using the brick style, but you could use the kind in a tub. (Or even a flavored one if you’re feeling fancy! Chive, anyone?)

And third, you need bacon. You need relatively thin bacon, so that it’s pliable and wrappable. Thick-cut bacon is a delight but it just won’t work for this purpose, so save that for Sunday breakfast.

And here’s all you do:

Take each cracker and spread it with a little cream cheese. Put another cracker on top to make a cute l’il bite-sized sandwich. Cut each slice of bacon in half and then wrap one of the halves around the cracker sandwich. Place it on a wire rack on a sheet pan and bake.

Now, the best way to go about this is to bake them low and slow for two hours at 250°F. That way the bacon and crackers both get nice and crisp. But! If you’re pressed for time, you can bake these at 350°F for 25-30 minutes instead. They won’t get quite as crispy, but it’ll do. And broiling them for a quick minute or two after either method doesn’t hurt matters either. Enjoy!

Ingredients
  • 1 box club crackers
  • 1 lb thin-sliced bacon, cut in half
  • 1 (8 oz) container cream cheese, softened (can use flavored if desired)
Preparation
  1. Preheat oven to 250°F and line a baking sheet with foil, then top with a wire rack.
  2. Spread cream cheese on half of the crackers. Place remaining crackers on top to form a sandwich.
  3. Wrap each cracker sandwich in bacon and place on rack.
  4. Bake until bacon is crispy, about 2 hours.
  5. If desired, broil crackers for just 1-2 minutes at the end of cooking to crisp up and caramelize bacon.
  6. Enjoy!
