Banana bread is an absolute staple in my recipe collection. I’ve been making my mother’s tried-and-true recipe since I could hold a spoon, but I’ve also experimented with many other versions over the years. Some have darn been tasty, like our Salted Caramel Banana Bread, while others have been an utter waste of time and ingredients. You never know until you try! So, when I came across the idea of Cottage Cheese Banana Bread I was curious, but didn’t set my exceptions too high.

To my surprise, it came out incredibly moist and pretty delicious, if I do say so myself! The cottage cheese isn’t very noticeable in the final product, but does give the loaf an extra rich texture (and a bit of protein to boot!). The batter includes a generous four ripe bananas so there’s no shortage of banana flavor here! I also like to add a pinch of cinnamon for a touch of warm spice, you’re welcome to leave that out if you aren’t a fan.

From breakfast to a bedtime snack, there’s no wrong time to eat a slice of banana bread. In my house, a loaf typically doesn’t last more than a few hours unless I hide it… or ask someone to hide it from me. Ingredients
  • 2 cups flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • Optional: ½ teaspoon cinnamon
  • 4 ripe bananas
  • ½ cup cottage cheese
  • 1 cup granulated sugar
  • 2 eggs
  • ⅓ cup oil
  • 1 teaspoon vanilla
Preparation
  1. Preheat oven to 350 degrees F and grease a standard loaf pan.
  2. In a medium bowl, mix together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, mash bananas then mix in the cottage cheese, eggs, oil, vanilla, and sugar.
  4. Slowly add the dry ingredients to the wet, mixing until just combined.
  5. Transfer batter to the prepared loaf pan and bake for 55-60 minutes, or until an inserted toothpick comes out clean.
  6. Allow loaf to cool before slicing.
