Coca-Cola Layer Cake

When someone mentions Coca-Cola your first thought is probably the tingly bubbles and that distinctive flavor. But, this favorite drink can also be used to bake and cook with. In this Coca-Cola layer cake there’s Coke in both the cake and the frosting for a rich dessert that’s so special.

In the cake there’s a bit of cocoa powder in addition to the soda. However the combination of the two results in a reddish brown color once the cakes have been baked. They look almost like red velvet cake.

This red velvet style cake goes perfectly with the cream cheese and Coca-Cola frosting. This creamy topping uses 4 cups of Coke that you then boil down until its less than a cup of liquid.

You might think that this would burn easily, but the soda actually reduces very nicely. The finished textured of the concentrated soda is not unlike molasses in appearance and color. But, it has that bright, complex Coca-Cola flavor- just in a stronger concentration. And, it didn’t stick to my stainless steel saucepan at all.

You do want to chill the cakes before frosting as they are very moist and tender. This is often the case with cakes that use soft drinks since the bubbles can make them rise well in the oven.

Always do a crumb coat before adding the majority of the frosting. This way the crumbs are sealed in that first layer of frosting and don’t ruin the visual effect of the frosting.

I also recommend chilling the finished cake after you frost it. Despite the fact that the frosting has a lot of cream cheese in it, the Coca-Cola reduction in the mix means it’s a bit looser than some other frostings.

For the frosting:
  • 4 cups Coca-Cola
  • 10 tablespoons unsalted butter, room temperature
  • 1 (8 oz) package cream cheese, room temperature
  • 4 cups powdered sugar
  • 1/2 teaspoon salt
For the cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 stick unsalted butter, room temperature, plus extra for greasing
  • 1 1/2 cups Coca-Cola
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
Preparation
  1. Add Coca-Cola to small saucepan. Heat to low boil and cook uncovered until reduced to 1/2 cup, about 40 minutes. Allow to cool completely.
  2. While Coca-Cola reduction cools, preheat oven to 350˚F.
  3. Combine flour, sugar, cocoa powder, baking powder, baking powder, baking soda, and salt. Add butter to dry ingredients and use electric mixer to blend until sandy mixture forms.
  4. In separate bowl combine remaining cake ingredients. Slowly add wet ingredients to dry until uniform in color.
  5. Pour batter into 2 8” round baking pans that have been greased and lined. Bake for 35-40 minutes or until toothpick inserted in center comes out clean.
  6. Allow to cool for 30 minutes before removing from pans. Then transfer to refrigerator to chill for 30 minutes or more.
  7. While cakes are cooling combined cooled Coca-Cola with remaining icing ingredients until smooth. If mixture is too moist add 1/4 cup powdered sugar at a time until thick.
  8. Cut tops off cakes using bread knife if they aren’t even on top. Place first cake on serving plate and top with even layer of icing. Add second cake on top. Use a small amount of icing to frost the crumb coat, or first coat. Once crumbs have been sealed in add remaining frosting to top and sides of cake.
  9. Refrigerate for at least 30 minutes before cutting into slices to serve.
