Chocolate Covered Strawberries have my heart all year round but they’re an absolute must for Valentine’s Day. I love the way they taste — how can you not? — but I also love how incredibly simple they are to make. It’s little more than melting some chocolate, dipping a strawberry in it, and letting it harden. That’s about as easy as it gets.

This version is just about as easy but uses a special trick of cutting the strawberry first so they end up looking like adorable little hearts. Adorable little edible chocolate-covered strawberry hearts and you only need three ingredients. There’s a lot to love about that!

The first step is to wash your strawberries and then pat them dry. (If they’re wet, the chocolate won’t stick, and that would be sad.) Then, you hull them with a sharp knife, using the tip to carve out the stem.

Then, you’ll slice them in half lengthwise.

You’ll take each half and cut a small “v” shape in the top center, where the stem was.

If you want them to be really heart-shaped, you can also round the edges a bit with your knife.

Then just place that half on a stick of some kind — a thick skewer or lollipop stick works great.

And then it’s time to dip!

For the melted chocolate you just need a cup of chocolate chips and a teaspoon of coconut oil. Use semi-sweet or dark chocolate chips, not milk. Milk chocolate seizes up easier so it might give you trouble. The coconut oil helps the chocolate harden and have a nice snap later, but it’s not totally necessary if you don’t have any on hand.

Just melt the chocolate in the microwave in 30-second intervals, stirring each time, until it’s nice and smooth and then dip those little hearts. It’s best to place them on parchment or wax paper to harden. If they’re taking too long at room temperature, the fridge can speed things along but might create a bit of condensation. Enjoy!

Ingredients
  • 1 lb fresh strawberries
  • 1 cup chocolate chips, semi-sweet or dark chocolate
  • 1 teaspoon coconut oil
  • Wooden skewers or lollipop sticks
Preparation
  1. Rinse strawberries and gently pat dry.
  2. Using a small, sharp knife, carve out stem of strawberry using a circular motion.
  3. Slice strawberry in half. At the top, cut a small V-shape in the center of each half so the strawberry half resembles a heart. Insert a wooden skewer in the bottom of the strawberry half. Repeat with remaining strawberries.
  4. Place chocolate chips and coconut oil in a heat-safe bowl and microwave for 30 seconds. Stir, and then microwave in 30-second intervals until melted and smooth, stirring in between.
  5. Dip strawberries in melted chocolate, then set on a baking sheet lined in parchment paper and let rest until set. Enjoy!
