Cookies are an important part of any balanced diet. When was the last time you had a really GOOD cookie? These cookies are not the kind that takes a lot of time to make, they’re the ones you Frankenstein together that end up tasting amazing! These cookies have a gooey marshmallow center with a delicious cinnamon crunch on top. We all love s’mores, but they’ve been a little boring via the 21st century and definitely in need of a facelift.

I saw this technique online using store-bought cookie dough to make the perfect s’more. They did the whole Hershey chocolate layer and graham cracker base layer, then topped it with mini marshmallows and the cookie dough. I thought, “What a brilliant idea, I need to make this.” Let me tell you, baby, these are amazing!

The one flaw in the original recipe is the graham cracker base. Those crackers don’t develop flavors post-baking, so I thought of using the graham cracker in a topping similar to how you make the crust of a cheesecake. It is the MOVE! That sweet cinnamony topping adds such a flavorful taste to an originally very basic cookie dough. The marshmallow filling is the wow factor. Ditch the extra Hershey’s chocolate, unless you’re dying to add it.

This simple cookie recipe has got me inspired to think about what other types of boring cookies we can elevate. Thinking outside the box when it comes to baking is the most fun part of being a chef. Like salty potato chip toppings and creamy peanut butter fillings, I’m determined on this journey. What kind of cookie would you create?

Ingredients:
  • 16 oz. Tollhouse chocolate chip cookie dough
  • 6 large marshmallows, halved
  • 3 graham crackers, crushed
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • A pinch of cinnamon & salt
Directions:
  1. Preheat the oven to 350 °F and prepare a parchment-lined sheet tray.
  2. Mix the crushed graham crackers, brown sugar, granulated sugar, cinnamon, salt, vanilla, and melted butter in a bowl.
  3. Form two squares of cookie dough into a round disc.
  4. Wrap cookie dough around half a marshmallow exposing the top of the marshmallow. Place 6 cookies per sheet tray.
  5. Sprinkle 1 teaspoon of graham cracker crumbs on top of each cookie and roll the cookie in any of the fallen crumbs.
  6. Bake for 13 - 15 minutes or until golden. Let cool for 5 minutes.
  7. Enjoy!
