If I’m baking something on a whim because I have a craving, nine times out of ten it’s a chocolate chip cookie. Well, a batch of chocolate chip cookies. Sometimes those fresh-out-of-the-oven cookies get paired with a scoop of cool and creamy ice cream or maybe even some whipped cream, if we have it. But warm gooey cookies pair so very well with something cool and creamy that it’s well worth making a dessert where that combination is the entire intention and that’s precisely what this Chocolate Chip Cookie Lush does.

The word lush brings to mind all things elaborate and swanky, but when it comes to dessert it just means an easy and simple layered confection that tastes rich. A crunchy base of cookies is topped with a couple of silky layers of cheesecake or pudding and whipped topping and chilled until set, and there you have it – the incredible, irresistible lush. This one is based on chocolate chip cookie dough so it’s even easier to love.

You just need a few easy to find ingredients, like pre-made cookie dough that you press into the bottom of a baking dish and bake in a single layer, and then cream cheese and powdered sugar that you whip up and combine with some airy whipped topping. Once the cookie layer is cool, the cream cheese mixture forms the next layer.

A layer of pudding goes on next, followed by a layer of whipped topping, and then a nice sprinkle of mini chocolate chips. You’ll want to chill this for a few hours so the layers are set and slice-able. All that’s left to do after that is dig in, and trust me, that’s really something to look forward to.

Ingredients
  • 1 package refrigerated chocolate chip cookie dough
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 (12 oz) carton Cool Whip, thawed and divided
  • 3 cups milk, chilled
  • 1 (3.9 oz) package instant chocolate pudding mix
  • 1 (3.4 oz) package instant vanilla pudding mix
  • Mini chocolate chips, for serving
Preparation
  1. Preheat oven to 350°F.
  2. Let cookie dough rest at room temperature for about 10 minutes to soften.
  3. Press cookie dough into an ungreased 9x13-inch baking pan. Bake until golden brown, about 15 minutes. Let pan cool on a wire rack.
  4. Meanwhile, beat cream cheese and powdered sugar with an electric mixer until smooth in a large bowl. Fold in 2 cups of the whipped topping. Spread mixture over cookie layer.
  5. In a large bowl, whisk together the milk and pudding mixes until thick, about 2 minutes. Spread over cream cheese layer.
  6. Top with remaining whipped topping, then sprinkle with mini chocolate chips.
  7. Cover and chill until firm, 8 hours and up to overnight. Enjoy!
