This easy chicken chop salad is packed with all the best sandwich toppings and ready to be piled high on a good sub roll, over a salad, or scooped onto your favorite cracker. We’ve taken juicy, shredded chicken and tossed it with chopped salami, roasted red peppers, briny pepperoncini, and a zesty dressing that brings it all together. It’s everything you love about a classic deli sandwich—minus the fuss, and plus a whole lot of flavor. Lunchtime has never looked so good!


While you can chop all your ingredients individually, we often pile everything (except the dressing ingredients) on a big cutting board and chop it all at once with a nice and sharp knife. Transfer your chopped toppings to a big bowl and mix in the may, lemon juice and zest, and remaining seasonings. If you like things extra spicy feel free to add more red pepper flakes or throw in some pickled jalapeños.


Give the salad a good toss to evenly coat all the fillings and pop it in the fridge for about 30 minutes to allow those flavors to meld together. It’s the kind of dish that somehow gets even better with time, making it perfect for meal prep or a make-ahead dish. Ingredients
- 3 cups shredded chicken, cooked
- 4 oz salami, roughly chopped
- 1/3 cup roasted red peppers, drained and chopped
- 1/4 cup pepperoncini, drained and chopped
- 1 tablespoon pepperoncini brine
- 1 tablespoon roasted red pepper brine
- 1 lemon, zested and juiced
- 1/2 cup mayo or greek yogurt
- 1 1/2 teaspoons dried oregano
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Buns for serving
Preparation
- Add all ingredients to a large bowl and mix until evenly combined.
- Cover and chill for 30 minutes before serving for best flavor.
- Serve on buns, over greens, or with crackers.
