Cheeseburger Quesadillas

It’s amazing what you can do with flour tortillas when you fold them just right. They go from burrito wrapper to warm and crispy folded delight in no time. And, since they only need to be folded once you don’t need to be a chef to master this technique. For these cheeseburger quesadillas you only need the same things you’d load onto a cheeseburger and some large, flour tortillas.

To get started brown your ground beef and then set it aside. Because we’re doing these as quesadillas there’s no need to make patties, just brown the beef and break it up as you would for taco meat.

Then you’ll need to assemble the burger fixins of your choice. Here I used cheddar cheese, pickles, ketchup, mustard, and onions to fill the tortillas.

There’s also a wonderful burger sauce for dipping. The best way to eat these I’ve found is to cut them in half so that you can dip them more easily. This sauce is made from dill relish, ketchup, mayonnaise, and a hefty dose of black pepper. It’s the perfect counterbalance to the rich cheese and beef in each crunchy tortilla.

Cheeseburger Quesadillas

This is one of those dinners that’s easy to make and so fun that you’ll want to make it over and over. Plus I actually find they’re a little easier to eat than regular burgers on buns, which can become soggy or disassemble of their own volition.

For the sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 teaspoons dill pickle relish
  • 1/2 teaspoon ground black pepper
For the quesadillas:
  • 1 lb ground beef, browned with salt and pepper then drained
  • ketchup and mustard to taste
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup thinly sliced onions
  • 1/4 cup dill relish or dill pickle chips
  • 4 teaspoons vegetable oil
Preparation
  1. Combine sauce ingredients and set aside.
  2. Heat large, clean skillet over medium heat and add 1/2 teaspoon oil. Add tortilla to pan and sprinkle with 1/4 cup cheese. Add 1/4 of the beef on top and add ketchup and mustard to taste. Add relish or pickles and onions to one half of tortilla.
  3. Fold tortilla in half after 3 minutes then carefully flip and brown other side. Repeat for remaining tortillas.
  4. Cut each quesadilla in half and serve with sauce to dip in.
