Sure, it’s a little indulgent, but it’s all about balance, right? And there’s no veggie that pairs better with cheese than cauliflower. Throw in some corn and you’ve got one delicious side on your hands. This Cauliflower Corn Casserole comes together in a flash and bakes up in one simple dish. Basically, it’s the side dish of our dreams!

Start out by cutting the cauliflower into bite-sized florets and placing them in a lightly greased baking dish. Add in the frozen corn (or fresh if you have it!), then get started on the sauce. Mix together four eggs, some heavy cream, butter, spices, and a generous amount of mozzarella cheese. Pour the mixture over the veggies and top it all off with some parmesan cheese. Pop it in the oven for just over half an hour and then it’s time to eat.

Ingredients
  • 2 heads cauliflower, cut into florets
  • 1 1/2 cups frozen corn
  • 4 eggs
  • 1 ½ cups heavy cream
  • 1 1/2 teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 tablespoons butter, melted
  • 2 cups mozzarella
  • ½ cup chopped green onions
  • ½ cup grated parmesan
Preparation
  1. Preheat oven to 350 degrees F and grease a 9x13 baking dish.
  2. Add cauliflower florets and corn to the prepared baking dish.
  3. . In a medium bowl, beat together the eggs, heavy cream, seasonings, mozzarella cheese, and green onions. Mix in the melted butter (make sure butter has cooled before adding it in).
  4. Pour cheese mixture over the veggies and top with parmesan.
  5. Bake for 35-40 minutes or until top begins to brown. Serve warm.
