There are few dishes that get gobbled up as quickly as meatballs at a dinner party or potluck. Their small size makes them so appealing. And, with the right sauce they’re the perfect finger food. This recipe for buffet meatballs is a vintage one that’s been delighting people for decades.

And, just in case you’re not throwing a party anytime soon the creamy dill sauce also makes them ideal for adding to some egg noodles for a main course entree that’s quite hearty.

Buffet Meatballs

The sauce is a heated blend of sour cream and dill, garnished with a bit of paprika. This combo is reminiscent of meatball recipes from Eastern Europe, with that comforting flavor profile that many of us will have grown up enjoying. Here the spices add just the right amount of oomph.

For simplicity this recipe uses ground beef, but you can use a blend of ground beef and pork if you like instead.

Buffet Meatballs

After you roll the meatballs into shape remove them from the pan and use just a bit of the drippings to make the sour cream sauce. Then combine them all at the end, serve over noodles or potatoes or by themselves on a platter with toothpicks for serving party style.

I happen to love the kind with the little colored decorations on the end, but any type of toothpick from bamboo to metal cocktail picks will work well here.

Ingredients
  • 1 1/2 lbs ground beef
  • 2 cups sour cream, divided
  • 2 tablespoons catsup
  • 1 1/2 teaspoon salt, divided
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 3 tablespoons bread crumbs
  • 1 tablespoon olive oil
  • 1/2 cup water, divided
  • 2 tablespoons fresh dill, chopped
  • paprika for garnish
Preparation
  1. Combine beef with 1/4 cup sour cream, catsup, 1 teaspoon salt, pepper, garlic powder, Italian seasoning, and bread crumbs. Form into balls.
  2. Heat oil over medium heat. Add meatballs and cook until browned, about 5 minutes each side. Add 1/4 cup water and cover. Allow to simmer for 10 minutes.
  3. Remove meatballs to serving dish using slotted spoon. Use same spoon to remove any debris from pan. Discard all but 1 teaspoon of the drippings, which you can leave in the pan.
  4. Add remaining sour cream and salt to pan along with dill and remaining water to make a sauce. Heat on medium low until warmed. Drizzle sauce over meatballs then sprinkle paprika over top. Serve with toothpicks for an appetizer or over rice, noodles, potatoes for an entree.
