It’s no secret that we’re big fans of casserole here at 12 Tomatoes. And if they are easy to prepare and keep in the fridge so you can make it ahead of time? All the better! We’ve tried Overnight Banana French Toast Casserole, Overnight Eggs Benedict Breakfast Casserole, and so many more. This one, however, might be one of my new faves.
I didn’t have lox until I moved out to the Pacific Northwest about six years ago. Traditionally served on a bagel with cream cheese and other garnishes, it was love at first bite! When I saw this overnight casserole, I knew I had to give it a try. If you’re in the mood for an easy casserole that only takes a few minutes to prepare, then this is the recipe for you.
You’ll start by placing melted butter in a 13×9-inch baking dish to cover the bottom. Then, spread bagel pieces evenly in the prepared dish. Sprinkle smoked salmon, cheese, and chives evenly over bagels.
Next, combine eggs, milk, cottage cheese, salt, and pepper in a large bowl. Whisk until combined. Pour over bagel mixture in pan. With back of a large spoon, gently press down bread pieces to make sure all of the ingredients are moistened. Cover with plastic wrap and refrigerate for 4 hours up to overnight.
When ready to bake, heat oven to 350ºF. Bake 45 minutes or until set and edges are puffed and golden. Let stand 10 minutes before serving. You can top the casserole with any number of garnishes, including cucumbers, tomatoes, and chives.

- 4 oz. Swiss cheese, shredded
- 4 oz. Monterey Jack cheese, shredded

- 8 eggs, beaten
- 2 cups half and half
- 1 cup cottage cheese
- Salt & pepper to taste
