
I can’t believe bacon guacamole is not a thing yet. Burgers are at peak perfection with a smashed avocado and bacon with those two unique meaty and creamy fats, so why not work as a dip. Take the standard guacamole up a notch by roasting your tomatoes in the bacon fat to create wonderfully juicy pockets in your guac. The bacon adds this rich meatiness that gets cut by these juicy cooked tomatoes. Roast the bacon and tomatoes at the same time to ward off any excuse you have to make this at your next Super bowl party.

Normally I would NEVER roast something as juicy as tomatoes with bacon, BUT if you roast them cut-side up the juices don’t have a chance to run out onto the sheet tray resulting in crispy bacon and partially dehydrated tomatoes. The bacon fat makes all the difference in the way these tomatoes taste.

Be sure to break up the bacon right before mixing it into the guacamole. You want to eat this as fresh as possible. Top tip if you prepare the bacon and guacamole ahead of time, slightly undercook the bacon slices. Pop the slightly undercooked bacon back in a preheated oven to finish cooking for maximum crispy and juiciness. My recommendation is to prep the raw bacon and sliced tomatoes, then pop them into the oven right before guests come over and have the guac ready in the fridge.

Making the guacamole ahead? My top tip for keeping guacamole from going brown too quickly is to cover the guac directly with a dampened paper towel making sure no air can sneak in, then squeeze a lime or lemon over the paper towel. Cover with an air-tight lid and store in the fridge for up to 24 hours.

Bacon Guacamole

Ingredients
- 6 strips thinly sliced bacon
- 1 cup cherry tomatoes, halved
- 3 ripe avocados
- 1 shallot, finely diced
- 1/4 cup cilantro, chopped
- 2 limes, juiced
Preparation
- Preheat a 350° oven and prepare a foil-lined sheet tray
- Place 6 strips of bacon on the pan evenly spaced apart, then arrange sliced tomatoes cut-side up in between the bacon.
- Season tomatoes with salt and bake in the oven for 20 - 22 minutes. The bacon should be crispy and tomatoes softened. Let cool.
- In a dish, smash together the avocados, onion, cilantro, and lime juice. Season with salt and pepper
- Add bacon to guac and smash into small pieces. Fold in the cooked tomatoes and serve!
