If we go out for donuts there’s a very strong chance that I’m going to end up picking an apple fritter. No matter the season, this sweet treat just hits the spot every single time. So, when I came across the idea of an Apple Fritter Breakfast Casserole you know I had to give it a try immediately! Made with tender apples and buttery croissants, this casserole is deliciously indulgent and packed with warm fall flavors.

You’ll start things out by cooking the apples on the stove top. Heat some butter, brown sugar, cinnamon, and nutmeg in a skillet until it forms a smooth sauce. Throw the apples in and continue to cook until they’re nice and tender. Diced croissants are spread in the bottom of a 9×13-inch baking dish and then the apple mixture is spooned on top. A simple egg and cream mixture is poured over everything and then your casserole is ready for the oven.

The casserole will bake for about 35 minutes or until golden brown. Allow it to cool for a few minutes and then drizzle the icing over top for a stunning finish. Ingredients
  • 6-7 baked croissants, cubed
  • ½ cup heavy cream
  • ½ cup applesauce
  • 3 eggs
  • ½ teaspoon cinnamon
  • 1 ½ teaspoon vanilla extract
Apple Mixture
  • 4 large apples, peeled and diced
  • 5 tablespoons butter
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 ½ teaspoons cornstarch
  • 1 tablespoon water
  • 1 teaspoon lemon juice
Icing
  • ½ cup powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla
Preparation
  1. Preheat oven to 375 degrees F and lightly grease a 9x13-inch baking dish.
  2. Add cubed croissants to the baking dish and spread into an even layer. Set aside.
  3. To cook apples: melt butter in a large skillet over medium-low heat. Add brown sugar, cinnamon, and nutmeg and mix until smooth. Add apples and cook for 5 minutes, stirring often. Mix together cornstarch and water in a small bowl. Once fully incorporated, stir mixture into apples. Stir in lemon juice then remove from heat.
  4. In a medium bowl, whisk together heavy cream, applesauce, eggs, vanilla, and cinnamon.
  5. Spoon apple mixture onto croissant layer and then pour egg mixture evenly over top. Bake for 35-40 minutes.
  6. For icing: Mix together powdered sugar, cream, and vanilla until smooth. Allow bake to cool for 5 minutes then drizzle icing over top.
