4-Ingredient Souper Rice

While I’m calling this a side dish, it’s technically hearty enough to count as a main. Why? Well, it’s full of savory, chickeny flavor which just kind of makes it feel like the main attraction. But it only takes four ingredients to make. AND, it only takes about ten minutes. (Thank you instant rice!) It’s so easy, so yummy… well, it’s just souper!

It’s “souper” because it relies on a can of cream of chicken soup, get it? And in fact, that’s not the only kitchen shortcut here. One of the three ingredients is instant rice, so this cooks up in mere minutes. Instant rice is just rice that has been partially cooked and then dehydrated so that when you are ready to cook it, it cooks so much faster. It really is a ten-minute recipe! I didn’t start experimenting with doctoring up instant rice until recently but it sure is a time saver and it’s a great pantry staple to keep on hand.

Just add your can of soup and some chicken broth to a pot and bring it to a boil, then stir in the rice and parmesan cheese. Cover the pan, take it off the heat, and just let it sit until the liquid is absorbed, which takes about five minutes. And that’s it! Could that be any easier?!

Ingredients
  • 1 (10 oz) can cream of chicken soup
  • 1 1/2 cups chicken broth
  • 1 1/2 cups instant rice
  • 1/3 cup parmesan cheese, grated
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. In a 2-quart saucepan over medium-high heat, bring soup and broth to a boil.
  2. Stir in rice and cheese. Cover pan and remove from heat.
  3. Let rest until rice is cooked and liquid is absorbed, 5-8 minutes. Season to taste with salt and pepper. Enjoy!
