3-Ingredient Almond Butter Cookies

These almond butter cookies are crispy, slightly sweet, and totally satisfying. The best part? You only need 3 ingredients to make them. Plus, there’s no added sugar, flour, or eggs, so you can munch away on these cookies completely guilt-free.

I was surprised to come across this recipe and knew I had to try it out for myself! I couldn’t believe I could get delicious cookies using just almond butter, maple syrup, and a dash of cinnamon. Fortunately, these cookies turned out even better than I imagined.

Now, in order to get the right consistency, you’ll need creamy, all-natural almond butter and pure maple syrup. Thicker sweeteners like honey or agave won’t work for this recipe. Keep reading to find out a few more tips before trying it out yourself!

To get started, preheat the oven to 350°F. Line baking sheet with parchment paper and set aside. Then, in a large bowl, add almond butter, maple syrup, and cinnamon. Using a firm spatula, mix ingredients together. The dough will be liquidy at first, but the almond butter will absorb the syrup the longer you stir. Your dough should be firm enough for you to scoop and shape.

Scoop out 1 tablespoon of cookie dough and roll between palms to make a smooth round ball. Place onto prepared cookie sheet. Repeat with remaining dough, spacing dough balls 2 inches apart. Using the palm of your hand, press down on each dough ball to flatten into a round disk (between 1/4 inch to 3/8 inch thick).

Bake cookies for about 12 minutes. Cookies will be soft and slightly cracked on top. Let cool completely before removing from pan. You can add a sprinkle of sugar, cinnamon, or even sea salt on top if you’d like, but these little guys are just as good without any help!

  • 1/2 teaspoon cinnamon
  • Optional: Sugar for dusting on top
