Everyone remembers the Roald Dahl book, Charlie and the Chocolate Factory, along with the 1971 film, Willy Wonka & the Chocolate Factory. As kids, the most exciting part was seeing the fantastical way the candy was made. YouTuber, Emmy, has a kit from 1971 that has instructions and special molds for chocolate. She doesn’t have Oompa Loompas to help her, but she manages on her own just fine!
Step One: Melt The Chocolate
When making chocolate candy bars, the secret is in the tempering. What’s tempering? Basically, it’s all about the temperature of the chocolate and getting the right kind of sugar crystals. Chocolate has six different kinds of crystals that can form, and we’re going for the fifth form, aka, beta crystals.
The first step is to melt the chocolate completely so there aren’t any crystals at all. You’ll want the chocolate to be around 110°-122°. There are a few methods for melting chocolate, but the one Emmy uses is called sous vide. All that means is cooking or melting in a temperature-controlled water bath. Keep the chocolate in there for 15 minutes, taking it out occasionally to knead the bag, ensuring the chocolate melts at an even pace.
Step 2: Cooling the Chocolate Down
The next step is to cool the water bath down to 82° in order to isolate the beta crystals. These crystals are what give the chocolate bars their nice shiny finish and crispy snap. To cool down the water add a few ice cubes. Leave the cholate in the cooler water for another 15 minutes. Make sure to knead the bag of melted chocolate during this process as well!
Step 3: Warm the Chocolate Back Up & Pour Into Molds
Next, it’s time to warm the chocolate back up to about 92°. Let the chocolate sit in the bath for 10 minutes. Then comes the fun part! Make sure to dry off your bag of chocolate thoroughly. Water and chocolate do not mix! If any water gets into the chocolate, it will sieze right up, and we don’t want that! Once the 10 minutes are up, snip off the corner of the bag and pour the chocolate into molds.
Step 4: Let The Chocolate Set & Unmold
You’ll want to wait at least an hour before unmolding the chocolate. You can put the chocolate into the fridge to speed up the process, but be careful! Make sure there is absolutely no condensation in your fridge because as we’ve said before, chocolate and water do not mix!
