Cheese tortellinis are cooked in a rich and velvety butter sauce, then lemon and capers are mixed in for a final result that wows.
If you aren’t familiar with a piccata sauce, let me describe the flavor. It’s more or less like a warm vinaigrette. Tortellini Piccata

Ingredients
- 6 tablespoon butter
- 3 cloves garlic, minced
- 2 ½ tablespoon flour
- 3 cups vegetable broth
- 1 teaspoon salt
- ¼ teaspoon cayenne pepper
- ½ teaspoon black pepper
- ~30 oz frozen tortellini
- 4 tablespoon capers, drained
- ¾ tablespoon fresh lemon zest
- 3 tablespoon fresh lemon juice
- ⅓ cup chopped parsley
- Parmesan cheese for topping
Preparation
- In a large skillet, melt butter over medium heat. Add minced garlic and saute for about 30 seconds.
- Add flour to the skillet, whisk until smooth, and cook for 1 additional minute.
- Slowly whisk in broth then add salt. Bring mixture to a gentle simmer and add frozen tortellini (do not thaw ahead of time).
- Stirring often, continue cooking until tortellini are heated through, about 8-10 minutes.
- Remove from heat and stir in capers, lemon zest, and juice. Garnish with parsley and parmesan cheese.
