Start out by rinsing the rice in a fine mesh strainer until the water draining out is clear in color. This removes the excess starch and gives the final dish a better texture. You’ll then heat a few tablespoons of oil in a large pan and cook the grains of rice until they start to turn golden in color. Next, add the diced onion and cook until softened. The tomato sauce, broth, and seasonings are then mixed in and the dish is brought to a boil.

You’ll then reduce the heat to a simmer and cover the pan. Let the rice simmer for a little over 20 minutes or until tender. Fluff it up with a fork and then it’s time to dig in! This dish makes a great side for tacos, enchiladas, and many of our favorite Mexican dishes. It’s the perfect way to round out a meal and everyone is sure to love the comforting flavor. Give the recipe a try the next time you need a delicious side dish!
