The plethora of local produce in the summer months is undoubtedly one of the best parts of the season. The difference in quality and flavor is so stark, especially when it comes to fruit. When fresh berries are available, I know I have to go all out and incorporate them in as many recipes as possible. Strawberry shortcake is quite possibly at the top of my all-time favorite desserts list, so when I came across the idea of Strawberry Shortcake Cookies, I knew they were a must-try. And boy, was I right!

These cookies capture the essence of the classic shortcake, packed with juicy, fresh strawberries. The addition of a hint of lemon juice and a tablespoon of sugar bumps up the tangy sweetness of the berries even more. Buttery dough mimics the flavor of shortcake beautifully and strikes just the right balance of a crispy outside and a pillowy inside. They bake for just under 20 minutes and will still look light in color when they’re done, so keep a close eye on them!

Ingredients
  • ¾ cup finely chopped fresh strawberries
  • ½ tablespoon lemon juice
  • 1 tablespoon sugar
  • ½ cup butter
  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 2 cups flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
Preparation
  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper. Set aside.
  2. Place chopped strawberries, lemon juice, and 1 tablespoon sugar in a small bowl. Stir and let for about 10 minutes while you prep the dough.
  3. In a large bowl, beat the butter, sugar, and brown sugar until light and airy. Add in eggs and vanilla, mix until fully combined.
  4. In a small bowl, sift together the flour, baking powder, and salt, then add the dry ingredient to the wet. Stir until just combined.
  5. Drain the liquid from the strawberries and fold into the dough.
  6. Roll dough into 12 evenly sized balls and place on the prepared baking sheet.
  7. Bake for 18-20 minutes.
