Strawberry shortcake is quite possibly at the top of my all-time favorite desserts list, so when I came across the idea of Strawberry Shortcake Cookies, I knew they were a must-try. And boy, was I right!
These cookies capture the essence of the classic shortcake, packed with juicy, fresh strawberries. The addition of a hint of lemon juice and a tablespoon of sugar bumps up the tangy sweetness of the berries even more. Buttery dough mimics the flavor of shortcake beautifully and strikes just the right balance of a crispy outside and a pillowy inside. They bake for just under 20 minutes and will still look light in color when they’re done, so keep a close eye on them!

Strawberry Shortcake Cookies

Ingredients
- ¾ cup finely chopped fresh strawberries
- ½ tablespoon lemon juice
- 1 tablespoon sugar
- ½ cup butter
- ½ cup sugar
- ¼ cup brown sugar
- 1 egg
- 2 teaspoons vanilla
- 2 cups flour
- ½ teaspoon baking powder
- ½ teaspoon salt
Preparation
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper. Set aside.
- Place chopped strawberries, lemon juice, and 1 tablespoon sugar in a small bowl. Stir and let for about 10 minutes while you prep the dough.
- In a large bowl, beat the butter, sugar, and brown sugar until light and airy. Add in eggs and vanilla, mix until fully combined.
- In a small bowl, sift together the flour, baking powder, and salt, then add the dry ingredient to the wet. Stir until just combined.
- Drain the liquid from the strawberries and fold into the dough.
- Roll dough into 12 evenly sized balls and place on the prepared baking sheet.
- Bake for 18-20 minutes.
