These absolutely exceeded my expectations. They are fluffy and springy with a touch of strawberry. These strawberry dream rolls pack a delicious flavor without packing on the calories. If you love crepes then you will die over this. Assembly couldn’t be simpler. Overlap three crepes, spread whipped cream all over, sprinkle with strawberries and wafer cookies, then roll it up and cut. I love a no-bake dessert and so will you with this delicious dessert. This fresh strawberry dessert may look like a lot of prep, but it actually comes together in a few easy steps. Whip the cream, crush the cookies, slice the berries, and make the crepes.

If this is your first crepe journey, I’m glad you’re here with me. This is a fool-proof and no-nonsense way of making these French desserts. A few key techniques to abide by here. ALWAYS have a bowl of cubed butter near for every crepe and keep your perfect flipping tool handy.

Start your crepes in a preheated pan and add a cube of butter. The butter should gently melt and not steam too quickly. If it steams, turn your pan off the heat and let it cool before starting over. Gently ladle the crepe batter into the preheated the pan and swirl to create an even crepe. It only takes 30 – 45 seconds to cook that first side, so don’t go anywhere. Watch the top of the crepe to dry out the surface to know when to flip it over.

If you’re making this ahead of time, stabilize your whipped cream with gelatin and these will be perfect. A refreshing strawberry confection that you and your family will be addicted to this year.

For crepes:
  • 4 eggs
  • 1 cup all purpose flour
  • 1/4 cup granulated sugar
  • 1 cup whole milk
  • 1 tablespoons vanilla extract
  • A pinch of salt
  • 2 tablespoons unsalted butter, cubed
For filling;
  • 4 cups fresh strawberries, hulled and sliced
  • 2 cups strawberry wafer cookies, crushed
  • Powdered sugar, for garnish
For cream:
  • 1 1/2 cups heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • a pinch of salt
Preparation
  1. Using a blender or immersion blender, combine all crepe batter ingredients together EXCEPT for the butter. Set aside
  2. Whisk the cream ingredients in a stand mixer until soft peaks form. Set aside
  3. Preheat a saute pan over medium-low heat for one minute
  4. Add a cube of butter to the pan and swirl. Once melted, add a ladle of crepe batter to the pan and swirl to create your crepe. The crepe should be thin, so don't worry if this is too thick.
  5. Flip crepe over after about 30 - 45seconds with a rubber spatula then continue to cook for another 20 seconds.
  6. Remove crepe to a plate and let cool while you repeat with remaining crepes.
  7. Assemble roll by three crepes overlapping halfway over each other. Spread half the whipped cream, then sprinkle with broken wafer cookie and fresh strawberries.
  8. Roll up by folding the sides about an inch to create a long rectangle. Then roll from one end to the other. Slice into 1 1/2 inch rings.
