My friends were recently in a heated debate about what makes chili, well, chili. Is it the beans, the meat, the chili powder? Or, does it come down to texture or thickness? No real conclusions were made, but the conversation spurred me to give this No-Bean Chili a try. And I have to admit, I’m very glad I did. Loaded with three different chili powders and a hefty three pounds of ground beef, this chili is sure to warm you up from the inside out.

The slow cooker does the bulk of the work here, but the recipe starts out with a quick stovetop step. You’ll brown the ground beef, drain off the grease, then add the onion, garlic, poblanos, and spices. Let that mixture cook until it’s nice and fragrant, then transfer it all to the slow cooker. Pour in the tomato sauce and fire roasted tomatoes, with the juices. Set it to low and let that flavor cook in all day long.

Ingredients
  • 3 pounds ground beef
  • 1 large yellow onion, diced
  • 2 large poblano peppers, diced
  • 3 cloves garlic, minced
  • 2 tablespoon chili powder
  • 2 teaspoons ancho chili powder
  • 2-3 teaspoons chipotle seasoning
  • 2 teaspoon cumin
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 (14 oz) cans tomato sauce
  • 2 (14 oz) cans fire roasted diced tomatoes
  • Topping: cheese, sour cream, tortilla chips, green onions, avocado
Preparation
  1. In a large dutch oven, brown ground beef until almost no pink remains. Drain off grease and return dutch oven to stovetop over medium heat. Add onions, peppers, garlic, and spices. Stirring often, cook for 4-5 more minutes.
  2. Transfer beef mixture to slow cooker then add tomato sauce and fire roasted tomatoes with the juices.
  3. Set slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours.
  4. Serve hot with toppings of your choice.
