6-Ingredient Slow Cooker Chicken and Stuffing

Here’s my hot take — stuffing (or dressing if you’re being technically correct) should be a year-round food. At least in my family, it’s relegated to the holiday table, which is just silly considering how much we all love it. It should play a part in so many more dinners and one good place to start would be this Chicken and Stuffing Dinner, which uses only six ingredients and comes together with nothing more than a little stirring and the magic of the crockpot.

What Ingredients Do You Need for Slow Cooker Chicken and Stuffing?

Just six! I love that answer. You’ll need:

  • Chicken breasts.
  • Green beans. (I’m calling for canned, but fresh or frozen work too.)
  • Store-bought stuffing mix.
  • A trusty can of cream of chicken soup.
  • Sour cream.
  • Butter.

If you’re feeling a little extra you can throw in some Italian seasoning and dried minced onion too, but you do get plenty of flavor without it thanks to the seasoned stuffing mix.

How Do You Make Slow Cooker Chicken and Stuffing?

This one is SO easy. Ready?

Put those chicken breasts in the bottom of the crockpot and season them with some salt and pepper and that Italian seasoning and minced onion if you’re using it. Top those with the green beans, and then sprinkle the stuffing mix over the top.

You’ll want to whisk together the sour cream, the cream of chicken soup, the melted butter, and about a third cup of water to form a nice little sauce and then dollop that over the stuffing. I like to stir the sauce into the stuffing a bit to help moisten it, but don’t be TOO thorough about it.

Cover the slow cooker, push a button, and walk away. Your work here is done. In about four hours (on high), that chicken will be incredibly tender, the stuffing will be mostly soft with some crunchy edges, and that sauce will be flavorful and comforting.

Stir everything together a bit as you shred up the chicken and then it’s time to dig in. It won’t be pretty, but slow cooker meals never are, are they? And besides, you get an entire tasty dinner with just six ingredients and the touch of a button. What’s better than that?

Ingredients
  • 1 1/2 lbs boneless skinless chicken breasts
  • 1 (14 oz) can green beans, drained
  • 1 (6 oz) box or package dry stuffing mix
  • 1 (10 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 4 tablespoon unsalted butter, melted
  • Optional seasonings: 2 teaspoons Italian seasoning, 1 teaspoon dried minced onion, Salt and black pepper
Preparation
  1. If using, season chicken with salt, pepper, and spices, then place in bottom of slow cooker.
  2. Top with drained green beans, followed by the stuffing mix.
  3. In a medium bowl, whisk together the sour cream, cream of chicken soup, melted butter, and 1/3 cup water.
  4. Pour over stuffing in slow cooker and roughly stir the two together. Cover and cook on high until chicken has cooked through, 4-5 hours.
  5. Stir together the chicken and stuffing, lightly shredding chicken. If desired, remove the ceramic slow cooker and insert and place under your oven broiler to brown the stuffing. Enjoy!
