When cold and flu season rolls around there is one recipe that we always have handy: this Sick Day Chicken Soup. Soup is a classic dish when under the weather, but this version is jam packed with nutrients and tasty as can be. Ingredients like cauliflower, ginger, and turmeric have anti-inflammatory properties and can help you feel better even sooner. Make up a big batch and get cozy!

To start out, heat olive oil in a large dutch oven or heavy bottom pan. Add in the onion, garlic, carrot, and turmeric and sauté until it’s nice and fragrant. Next, you’ll throw in the cauliflower, ginger, and broth. Let the soup come to a simmer and cook for about 10-12 minutes, or until the veggie are tender. At this point, I like to use an immersion blender to puree about 1/3 of the soup. This step gives it a thick and creamy texture! Add the shredded chicken, broth, and salt and pepper to taste and let it all simmer together for a couple more minutes.

Ingredients
  • 2 tablespoon olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 1 teaspoon turmeric
  • 1 large head cauliflower, chopped
  • 1 tablespoon grated ginger
  • 4 cups chicken broth
  • 1 1/2 cups cooked and shredded chicken
  • Salt and pepper to taste
Preparation
  1. In a large dutch oven or heavy bottom pot, heat olive oil then add onion, garlic, carrots, and turmeric. Season with salt and pepper and cook until fragrant, about 2-3 minutes.
  2. Add cauliflower, ginger, and broth and bring the mixture to a simmer. Cover and cook for 10-12 minutes or until vegetables are tender.
  3. Using an immersion blender, blend about 1/3 of the soup.
  4. Return to stove and add chicken and 1/2-1 cup water to achieve your desired thickness. Simmer for 2-3 more minutes and add additional salt and pepper as desired.
