Doesn’t this dish look absolutely incredible? It’s so bright and colorful! With tomato, basil, and garlic bruschetta, along with zucchini and broccoli, this meal is as healthy as it is delicious. Plus, it’s incredibly simple to make.

I’m always on the hunt for quick and easy meals to have during the week. Usually, I opt for a dump and bake casserole or a crockpot meal, but I recently discovered another easy method of cooking – sheet pan meals! Everything bakes right there in the same pan. All you have to do is grab some veggies, protein, and a few spices, put everything on a sheet pan, and bake for 20-30 minutes. Trust me, sheet pan meals are a total game-changer! You’ll start by preheating the oven to 400F. Drizzle the chicken breasts with olive oil and season with salt, pepper, and Italian seasoning. Once seasoned, bake for 15 minutes.

While the chicken is baking, it’s time to prepare the bruschetta. Tomatoes, garlic, and basil make up the basic mixture, with some olive oil and salt and pepper added in there as well. Set the bruschetta aside when done.

Next, remove chicken from the oven and add broccoli and zucchini to the baking sheet. Toss the veggies with olive oil, Italian seasoning, salt, and pepper. Bake another 10-12 minutes until the chicken is fully cooked.

Sheet Pan Bruschetta Chicken
  • 1 tbsp olive oil
  • 4 chicken breasts
  • 1 zucchini, sliced
  • 1 head broccoli, chopped
  • 1 tbsp Italian seasoning, divided
For the Bruschetta:
  • 1 tbsp olive oil
  • 6 plum tomatoes, diced
  • 5 cloves garlic minced
  • 1/4 cup freshly chopped basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Preparation
  1. Preheat oven to 400F. Drizzle chicken breasts with 1/2 tablespoon olive oil and season with salt, pepper, and 1/2 tbsp of Italian seasoning. Bake for 15 minutes.
  2. While the chicken is baking, combine all ingredients for bruschetta and set aside.
  3. Remove chicken from oven and add broccoli and zucchini to baking sheet. Toss the veggies with 1/2 tbsp olive oil, 1/2 tbsp Italian seasoning, salt, and pepper. Bake another 10-12 minutes until chicken is fully cooked.
  4. Remove baking sheet from oven and top chicken with bruschetta. Serve and enjoy!
