Sesame Chicken Salad

Ingredients
- Half a green cabbage, shredded or thinly sliced
- 3 cups cooked and shredded chicken
- 3 large carrots, shredded
- 4 green onions, chopped
- ½ cup fresh cilantro, chopped
- ¼ cup fresh mint, chopped
- ⅓ cup slivered almonds
Dressing
- 1 orange, zested and juiced
- 3 tablespoons sesame oil
- 3 tablespoons soy sauce
- 1/4 cup avocado oil
- 4 tablespoon rice vinegar
- 2 teaspoons honey
- 1-2 teaspoons sriracha
- 1 teaspoon fresh grated ginger
- ½ teaspoon garlic powder
- salt to taste
Preparation
- In a small bowl, whisk together all dressing ingredients for 1-2 minutes.
- In a large bowl, add cabbage, chicken, and carrot. pour dressing over top and toss to combine.
- Add green onions, cilantro, mint, and almonds and gently toss again.
