Schotcheroos 12-min copy

If you’re looking for an easy, crowd pleasing dessert, then we have just the recipe for you! These Scotcheroos take the concept of the classic rice krispie treat and seriously kick things up a notch. With a chewy peanut butter base and a rich chocolate butterscotch topping, these no-bake bars are bound to be the hit of the party. Be warned, it’s close to impossible to stop at just one.

The best part? These bars only take a handful of ingredients to make! You’ll start out by combining sugar, peanut butter, and corn syrup in a small saucepan and bringing the mixture to a boil. Immediately pour the hot mixture over the rice krispie cereal and stir until it’s fully coated. The next step is pressing the coated cereal into a greased 9×13-inch pan– I’ve found using a greased spatula works well for this so you don’t end up with a sticky mess attached to your spoon.

Finally, you’ll melt the chocolate chips and butterscotch chips together and spread the mixture over the pressed cereal. Now for the hard part: allowing the bars to cool before cutting into them!
