This bread freezes beautifully so I often double the recipe and make two loaves. One for now, one for later! The simple batter comes together in a matter of minutes with the usually baking staples and a couple other add-ins, like sour cream and buttermilk, to keep the bread super moist. Ingredients
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • ½ cup butter, room temperature
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 2 eggs
  • ½ cup sour cream
  • 2 teaspoon vanilla
  • 1 teaspoon lemon juice
  • ⅓ cup buttermilk
  • 1 ¼ cup fresh blueberries
Preparation
  1. Preheat oven to 350 degrees F and grease a 9x5-inch loaf pan.
  2. In a medium-sized bowl, sift together flour, baking powder, baking soda, and salt, then set aside.
  3. In a large bowl, beat together butter, white sugar, and brown sugar until smooth. Add eggs, sour cream, and vanilla and mix until fully combined.
  4. Slowly add dry ingredients and buttermilk until well incorporated, then gently fold in blueberries.
  5. Transfer batter to the prepared loaf pan and bake for 30 minutes then cover with foil and bake for another 30 to 35 minutes, or until an inserted toothpick comes out clean.
  6. Allow loaf to cool before slicing.
