To assemble your pinwheels, spread that creamy mixture across a burrito-sized flour tortilla, leaving a bit of room at the edges (you’ll trim them off later!). Then layer on slices of roast beef and roll everything up nice and tight. A little chill in the fridge helps them firm up for easy slicing, so don’t skip that step. Once sliced, they’re ready to serve, easy as that. Pop in a toothpick for easy grabbing, and watch them fly off the platter! We suggest making a double batch—trust us, you’ll be glad you did.

Ingredients
  • 2-3 large burrito-size flour tortillas
  • 10 oz sliced roast beef
  • 8 oz cream cheese, room temperature
  • 1/3 cup sharp white cheddar cheese, shredded
  • 1 tablespoon mayo
  • 1 tablespoon prepared horseradish
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1/2 teaspoon salt
  • black pepper, to taste
Preparation
  1. In a medium-sized bowl, add cream cheese, cheddar, mayo, horseradish, and seasonings. Mix until well combined.
  2. Place a tortilla on a clean, flat surface and spread cream cheese mixture in a thin layer, leaving about a 1-inch edge on the left and right sides as these sections will be tossed after cutting.
  3. Add a layer of roast beef slices over the cream mixture and roll tightly, then secure with a toothpick. Repeat with remaining tortillas.
  4. Chill rolls for 20-30 minutes, then slice into rounds about ½-inch wide. Serve right away.
