Insalata Caprese is a fresh, healthful salad that makes great use of fresh garden tomatoes. But what if you’re craving something a little heartier?

You can use almost identical ingredients and throw everything into a sandwich. A panini filled with mozzarella, tomatoes and basil makes for a wholesome meal. Time to grab those tomatoes and head to the kitchen!

Grilled Caprese Panini

(makes 4 servings)

Ingredients:

8 slices Italian bread, sliced 3/4-inch thick

8 slices fresh whole milk mozzarella cheese

2 roma tomatoes, sliced

8 fresh basil leaves, chopped

2 tablespoons balsamic vinegar

salt and pepper

1/4 cup olive oil

3 tablespoons fresh parmesan cheese, shredded

1/4 teaspoon garlic powder

Directions:

1. On four slices of thick bread of your choice, layer the mozzerella cheese and tomatoes.

2. Sprinkle with chopped basil leaves, vinegar, salt and pepper.

3. Top with remaining slices of bread.

4. In a small bowl combine oil, parmesan cheese and garlic powder.

5. Brush over both sides of each sandwich and either place on a grill over medium heat, or cook in a skillet until golden brown.
