This recipe is one of my new favorites for those busy weeknights! Not only are you getting TWO comfort meals for the price of one, but it all comes together in under 30 minutes. Plus, it’s a skillet meal, so the clean-up is an absolute breeze. That’s a win-win-win in my book!

The secret to what makes this recipe savory and delicious is how the macaroni is cooked. Instead of water, you’ll boil the noodles in a mixture of chicken broth, marinara sauce, and a blend of spices. All of that flavor soaks right into the noodles! Add in two kinds of cheeses and pepperoni, and you’ve got a meal everyone will love.

To make this easy dinner, start by whisking together broth, marinara sauce, garlic powder, salt, and Italian seasoning in a medium bowl. Set aside. Next, heat olive oil in a large skillet over medium-high heat. Saute onions until soft and translucent, about 3 minutes. Add 3/4 of the pepperoni package to the pan and mix until wilted, about 1 minute. Sprinkle in the pepper flakes and combine.

Then, stir in the broth mixture and pour into the skillet. Bring to a boil and add macaroni. Reduce heat to medium, and cover. Cook 10-12 minutes, until the pasta is tender, stirring a few times to make sure the pasta isn’t sticking to the bottom of the pan.

When the macaroni is done, sprinkle the grated cheeses on top. Stir until melted. Top with more cheese and pepperoni. This is one meal the whole family is sure to love!

  • 2 1/2 cups chicken broth
  • 3/4 cup marinara pasta sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried Italian seasoning
  • 3 teaspoons extra-virgin olive oil
  • 1 medium sweet onion, diced
  • 5 ounce package mini pepperoni
  • 1/8 teaspoon crushed red pepper flakes
  • 2 cups dried macaroni pasta
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Mozzarella cheese
