Pineapple Dressing by Kelli Davidson

Kelli Davidson won second place in our Holiday Baking Recipe Contest with this Pineapple Dressing recipe. She says:
This recipe became a part of our family’s traditions in the very early 60s right after Hawaii became a state and there was a national pineapple craze in America. My grandmother said that my mother became obsessed with all things pineapple and asked for some kind of pineapple addition to the holiday table. My grandmother found this recipe in their small town newspaper and it has remained almost unchanged in all the years since. I think the original used regular white bread instead of the brioche we use today.

Pineapple Dressing
Ingredients
- 2 sticks butter – plus 6 tablespoons more for topping, all softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 6 eggs, slightly beaten
- 1 teaspoon rum extract
- 1 (20 oz) can crushed pineapple, well drained
- 3 cups brioche, cut into small squares
- 1 1/2 cups pecans, roughly chopped and divided
Preparation
- Beat the 2 sticks butter, sugars, and eggs until light and fluffy.
- Add pineapple and extract and mix with hand mixer until well combined.
- Using a spatula, gently fold in diced brioche and 1 cup pecans, then transfer to a 9 x 13 dish.
- Sprinkle remaining pecans over top and dot with final 6 Tablespoons of butter.
- Cover with foil and place in a 350°F oven for 30 minutes. Remove foil and continue baking for another 20-30 minutes or until golden brown on top and done in center.
