You’ll start out by making your own pimento cheese spread. Mix together mayo, garlic powder, paprika, salt, shredded cheddar cheese, and diced pimento peppers. The pimento peppers can usually be found by the pasta sauces at the grocery store. Once the spread is smooth and fully combined, you’ll spoon the mixture on top of the chicken breasts and spread it out to the edges.
Pop them in the oven until they’re nice and golden and reach an internal temp of about 165 degrees.

Ingredients
- 4 boneless skinless chicken breasts
- 1 cup mayo
- 1 teaspoon garlic powder
- ¼ teaspoon paprika
- ½ teaspoon salt
- ⅔ cup shredded cheddar cheese
- 1 small jar pimento peppers
Preparation
- Preheat oven to 375 degrees F and lightly grease a glass baking dish.
- Drain pimentos and dice into small pieces.
- In a large bowl, mix together mayo, garlic powder, paprika, salt, cheese, and diced peppers until fully combined.
- Arrange chicken breasts in baking dish and spread pimento mixture generously over the top.
- Bake for 30-35 minutes or until top is golden and chicken internal temperature reaches 165-170 degrees F.
