When it comes to getting take out there are a few dishes I never order anymore. This isn’t because they aren’t tasty- on the contrary they’re so good that I had to learn how to make them at home! One of these dishes is chicken in peanut sauce with noodles (AKA peanut butter chicken). It’s got a very comforting flavor to me but when I made it home I realized that it doesn’t make all that much time or effort (which makes me love it all the more). In around a half hour you can make this hearty, flavor-packed noodle recipe, too!
To begin making this recipe make a savory sauce made from teriyaki sauce, peanut butter, garlic, and sesame oil. You can use either creamy or crunchy peanut butter for the sauce. This sauce will be hard to blend so using a stick blender can makes things easier.
Then cut some chicken into cubes. For uniformity of size using breast is the easiest, but you can use other cuts if you prefer. Toss the chicken in cornstarch before sautéing in oil to cook.
Next toss the chicken with the sauce and then cook it the chicken with the sauce until the sauce thickens up.
You can serve this chicken over rice if you like, but I love this over soba noodles. Raman or rice noodles are also good options.
Sprinkle some chopped green onion on top along with sesame seeds for a dinner that’s restaurant quality but made fresh in your own kitchen.
Peanut Butter Chicken

Ingredients
- 1/2 cup peanut butter
- 1/4 cup teriyaki sauce
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1/2 cup water
- 1 1/2 lbs chicken breast, cubed
- 3 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 14 oz soba noodle
- 1 teaspoon sesame seeds
- 1 green onion, chopped
Preparation
- In a bowl combine peanut butter, teriyaki sauce, sesame oil, garlic and water. Use a stick blender to mix. Set aside.
- Toss chicken with cornstarch in a large bowl. Add vegetable oil to large skillet and heat oil over medium heat. Add chicken and cook for 6 minutes or until no longer pink.
- Add sauce to pan and cook for 5 minutes or until sauce is thickened. While that's cooking prepare soba noodles to package directions and drain.
- Serve chicken over noodles and garnish with sesame seeds and green onion.
