Made completely on the stovetop, it comes together in less than 15 minutes and is super easy to customize to your liking. For this recipe, we’ve thrown in sweetened coconut flakes and walnuts, but feel free to switch up the inclusions. Pecans, peanuts, or dried fruit would all make tasty additions. Ingredients
  • 1 ¾ cup brown sugar
  • ⅓ cup whole milk
  • ⅓ cup butter
  • 1 ½ teaspoons vanilla
  • ½ teaspoon salt
  • 1 ¾ cup old-fashioned oats
  • ⅔ cup shredded sweetened coconut
  • ⅓ cup walnuts, finely chopped
Preparation
  1. Line a loaf pan with parchment paper, then set aside.
  2. In a small saucepan, add brown sugar, milk, and butter over medium heat. Stirring often, cook until mixture boils and then simmer for 3 more minutes.
  3. Remove saucepan from heat and stir in vanilla, salt, oats, coconut, and nuts.
  4. Transfer mixture to the prepared pan and spread into an even layer.
  5. Chill for 1-2 hours until fully set. Cut into small squares and enjoy!
