There’s something about a good marinade recipe that feels a little bit like cheating—simple ingredients, a quick mix, and suddenly you’ve got a piece of meat that’s dripping with flavor. This Mexican Chicken Marinade is exactly that kind of recipe. It’s zesty, savory, and just the right amount of smoky, making it perfect for everything from taco night to meal prep lunches. Whether you’re baking it in the oven or throwing it on the grill, this chicken always comes out juicy and tender.

This recipe is all about the spices—chili powder and cumin bring a smoky warmth, paprika adds a subtle sweetness, and garlic, oregano, and onion powder round everything out. Fresh lime juice gives the marinade a bright, citrusy zing while olive oil helps coat the chicken in all the flavor. Last but not least, the cilantro, that adds that iconic Mexican taste. Whisk it all together and pour it over your chicken breasts. Give them about 2-3 hours to marinate for the best flavor, then they’re ready to be cooked!

Throw it on the grill for a little added smokiness, or bake it to perfection in the oven—it’s delicious either way. However you serve it, one thing’s for sure, this Mexican Chicken Marinade is going to become a repeat favorite in your recipe rotation. It’s that go-to kind of recipe that tastes like you spent hours in the kitchen, but really, you just knew what you were doing.
