Mancatcher Brownies

If the name “mancatcher brownies” sounds funny to you then consider this: once upon a time a woman’s baking skills were one of the prized assets she brought to a marriage. Luckily today we don’t think that way, but recipes like these are a relic of that era. In keeping with the name, these brownies are actually the richest, most delicious brownies I’ve ever tasted.

In between the 2 brownie layers is a filling layer of caramel, nuts, and chocolate chips. When combined the overall flavor reminds me of turtles, those chewy confections that used to come in packs of 3- chocolate coated clumps of nuts and caramel. It’s like that candy but in brownie format. Now if that can’t land you a mate then I don’t know what will!

To make this dessert even better there’s very little work involved because you start off with a box of chocolate cake mix. The most time consuming part was unwrapping the caramel candies for the filling and then melting them on the stovetop.

You could use caramel baking bits instead and make the process even simpler. But, I think the flavor of the candies is unmatched so I always use them for this recipe and think it’s well worth the effort.

You will need to bake this twice, once for the base layer and again with all the fixins on top. This process ensures that everything is properly baked and that your brownies won’t be raw in the middle. Once you add the final batter layer on top it will look messy, but just stick with it.

Once it’s baked this pan of brownies will still look a little crazy and that’s ok! As it cools off any puffy or lumpy areas will settle down. But, you do want to make sure the pan is completely cooled before cutting as the caramel can be lava hot!

Ingredients
  • 30 caramels, unwrapped
  • 2/3 cup evaporated milk
  • 1 (15 oz) box chocolate cake mix
  • 1/2 cup butter, melted
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup chopped pecans or walnuts
Preparation
  1. Preheat oven to 350˚F. Combine caramels with 1/3 cup evaporated milk in small saucepan. Heat over medium-low for 5 minutes or until melted. Stir until uniform in color and texture. Set aside.
  2. Combine remaining evaporated milk with cake mix and butter. Measure out 1 1/ 3 cups of batter and add to greased 9’x13’ baking pan. Bake for 8 minutes.
  3. Remove from oven and pour caramel sauce over top. Add chocolate chips and nuts on top of sauce. Cover with remaining batter. Level and swirl the top layer with rubber spatula or back of spoon.
  4. Return to oven to bake for 13-16 minutes or until mostly set. Let cool completely before cutting into squares to serve.
