Loaded Totchos

When you have something as good as nachos it’s only natural to want to expand on the concept. Totchos do what nachos do but instead of chips you use tater tots for even more flavor and a great texture that’s never dry. To be clear this is by no means a health food. But, if you’re going to indulge in something fried why not go for the gold?

These loaded tatchos take the mashup genre and mix it up even more with the fry sauce and all the fixins of a loaded backed potato. These fancy tots are dressed to the nines and the result is a taste that the phrase “more is more” so perfectly describes!

The fry sauce is simple to make and adds a hint of tangy sweetness to the tots. It’s also a great dipping sauce for any kind of fried potatoes and for burgers so it’s a good recipe to keep on hand. Easy to whip up at the last minute, but it takes so many foods to new heights.

After baking the tater tots most of the way add some shredded Colby jack on top as well as some crumbled cooked bacon. I like mine extra crispy and when you return the pan to the oven the little bacon pieces get a little crispier which is a nice feature of this easy recipe.

Once the cheese is melted take the pan out, add the sauce on top, and sprinkle with some chopped green onions. If you love thinly sliced red onion or chili those would be great toppings to add here, too. You can switch it up to suit your tastes however you want. But, once you’ve had totchos you might not want to go back to regular nachos!

For the totchos:
  • 1 (32 oz) bag tater tots
  • 2 cups shredded colby jack or cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 green onions, sliced
  • salt and pepper to taste
For the sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 teaspoon Worcestershire sauce
  • 1/ 2 teaspoon pickle brine
  • 1/8 teaspoon paprika
  • 1/8 teaspoon prepared horseradish
  • pinch cayenne and/or rooster sauce to taste
Preparation
  1. Preheat oven to 425˚F. Arrange tater tots on large baking sheet lined with parchment paper. Bake for 22 minutes then turn. Add cheese and bacon and bake for 10 minutes more.
  2. While tots bake whisk together sauce ingredients.
  3. Remove from oven and drizzle with sauce. Sprinkle with salt and pepper to taste and finally top with chopped green onions. Serve immediately.
