This refreshing yet crunchy sheet pan Lemon Roasted Broccolini recipe is one of our favorite ways to cook greens, providing a fresh and enervating side dish that pairs beautifully with other veggies, and/or the protein of your choice. In as little as 20 minutes, you can have a premium side on the table, with very little to clean up after!

Sheet pan cooking has changed the way I cook a lot of veggies (and meals in general). Lemon-roasted broccolini is no exception. Using a sheet pan provides a quick method of getting everything baked and ready to eat using only one tray. You save time and energy, yet still can create a unique side with flair and flavor.

Our Lemon Roasted Broccolini recipe below is designed to create a flavorsome combination that peps up roasted greens with understated cheesiness, the earthiness of garlic, and some unexpected crunch. We’re using broccolini, but alternatively, this recipe could be made with regular broccoli, green beans, asparagus, or even cauliflower. The key is to go with fresh veggies that can soak up tangy flavors yet retain their crispness after spending time in the oven!

You could be forgiven for going all-out on adding cheese to this recipe. Mozzarella adds melty goodness to oven-baked dishes, and you can always add cheddar or jack for brightness and flavor. I love cheese, but have found through trial and error that this recipe is strengthened by using a little, instead of a lot. Parmesan is perfect for supplying a good cheesy flavor with some sharpness that contrasts well against lemon and garlic. I also like to sprinkle bread crumbs over the top to help keep everything brown and crispy without having to overcook the broccolini.

Ingredients
  • 2 bunches of broccolini (or 2 florets of broccoli)
  • 1/4 cup olive oil
  • Juice of 1 lemon (4 tablespoons)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons onion flakes
  • 2 tablespoons minced garlic
  • 1/2 cup crushed almonds
  • 1/2 cup parmesan cheese
  • 2 tablespoons breadcrumbs
  • Kosher salt and black pepper, to taste
  • Garnish: lemon wedges
Preparation
  1. Preheat the oven to 400°F.
  2. Combine olive oil, lemon juice, apple cider vinegar, garlic, and onion flakes in a mixing bowl, and stir thoroughly. Cut the ends off the broccolini (less than an inch) then add them to the mixing bowl, florets down, and toss them with the lemon mixture.
  3. Place the broccolini onto a sheet pan lined with parchment paper. Pour over any remaining sauce. Sprinkle with the almonds, then cover with parmesan cheese, breadcrumbs, and salt and pepper.
  4. Place the lemon broccolini into the oven and bake for 15-20 minutes, or until the florets begin to crispen. Remove from the oven, then place the lemon roasted broccolini into a serving dish, garnish with lemon wedges and serve immediately with the protein of your choice.
